Step 1

Heat Pressure Cooker on med/high heat and add oil.

Step 2

Lightly sauté onion until soft then add garlic. Stir for 1 minute.

Step 3

Add mince and lightly break up & colour while stirring. There’s no need to cook the mince at this point. It will cook while under pressure.

Step 4

Add dry pasta, pasta sauce, stock (& wine if using), salt and pepper, and herbs to taste. Stir to combine well.

Step 5

Put on the Pressure Cooker lid and lock.

Step 6

Let cooker come to pressure. When pressure indicator button pops up (this should take 2-3 minutes) reduce heat to low and cook for 10 minutes.

Step 7

When cook time is complete, turn off the heat and release pressure by knocking the release valve to #1 to release initial pressure and then to full release until pressure button drops. Unlock lid and remove.

Step 8

Stir the meal and serve. Sprinkle with Parmesan Cheese to taste

Chef’s Tips

Freeze your mince in snap lock sandwich size bags so that it is thinned out and quick to defrost. It can be broken up & thrown into this recipe frozen.
