These 1-Cup Christmas Puddings are so quick and easy and can be served up individually

Ingredients

  • 510g fresh white breadcrumbs (not dried)
  • 1 tsp ground ginger
  • 1 tsp mixed spice
  • 250g Butter, melted
  • 450g mixed dried fruit
  • 150g dates, chopped
  • 150g pitted prunes
  • 1 tsp Salt
  • 250g Brown sugar
  • 75g grated carrot
  • 2 Eggs, lightly beaten
  • 4 Tbs Brandy
  • 2 Tbs Golden syrup
  • 2 Tbs Parisian essence or treacle
  • 2/3 cup self-raising flour (gluten-free flour optional)

Step 1

Place all ingredients in a bowl and mix well to combine.

Step 2

Divide mixture evenly between muffin moulds.

Step 3

Place puddings in Steamer of Wok over boiling water, cover with lid and steam for 20 minutes.

Step 4

Top up water in wok and continue to steam for a further 40 minutes.

Chef’s Tips

Serve with custard.
