Classic Chicken Waldorf Salad

Chicken Waldorf Salad is a mixture of celery, grapes and apples with toasted walnuts and mayonnaise. This is our favorite recipe for chicken salad. It can be served on a bed spring greens or in a stuffed tomato.

Ingredients

  • Mayonnaise Ingredients
  • 1 egg yolk
  • 2 teaspoons sharp mustard
  • 1 teaspoon white vinegar
  • 150 ml neutral oil (peanut, sunflower, canola, vegetable)
  • Salad Ingredients
  • 300g Cooked Chicken Breast
  • 1 apple
  • 2 celery stalks
  • handful walnuts
  • 10 black seedless grapes
  • handful Craisins
  • 2 tablespoons fresh mayonnaise
  • 1 lime juiced
  • to season salt & pepper to season
  • lettuce to serve

Step 1

Mayonnaise For Best Results ingredients should be at room temperature.

Step 2

Insert Mini Bowl into Cook Processor, with small multiblade. Add Egg yolk, mustard, vinegar and 1 tbsp of the oil to the bowl. Close lid but remove measuring cup, Set speed to 4 and start. After 30 seconds increase the speed to 7 and gradually pour in the oil, in a thin stream, through the opening in the lid whilst the machine is running. Once the mayonnaise is ready stop the machine, transfer mayonnaise to a jar and chill in the fridge.

Chop the Apple in quaters, remove seeds and wedge each qtr into 3. Rinse Celery, Grapes and Lettuce. Slice cooked Chicken Breasts into 4-5 thick strips – they have to be thin to feed through the food processor.

Step 5

Remove Cook Processor Bowl from base and attach the Food Processor Bowl. Carefully take the manual adjustable slicing disc and adjust the thickness by holding the stem in one hand and turning the adjustment collar until you reach the widest thickness. Place disc into Food Processor Bowl, close the lid and ensure it is locked into place.

Step 6

Turn on Cook Processor. Press Time once so it flashes and turn dial to set to 5 minutes. Select speed 6 and press Start.

Step 7

Remove tube from food feeder. Carefully insert and feed through celery, apple slices, grapes, walnuts and chicken strips. Use tube to guide food down – do not PUSH as this creates uneven slices. DO NOT USE FINGERS.

Step 8

Once all ingredients are chopped press Stop/Cancel and turn off Cook Processor. Carefully remove lid. Stir though chopped ingredients, add fresh mayonnaise, half the lime juice, craisins, and seasoning to taste. Add extra if necessary.

Step 9

Divide lettuce over plates and top with Chicken Waldorf Salad. Enjoy! Happy Cooking!
