Ingredients

  • 2 cups Self-raising Flour
  • 2 tsp baking powder
  • 3/4 cup (165g) Caster sugar
  • 1/2 cup (125ml) light vegetable oil
  • 2 Eggs
  • 2/3 cup (165ml) Buttermilk
  • 1 tsp Vanilla extract
  • 1/2 cup strawberry jam
  • Icing sugar or cinnamon for dusting

Step 1

Preheat oven to 180°C

Step 2

Spray the Muffin Tray with cooking oil.

Step 3

Place flour, baking powder, and caster sugar in a bowl and mix well.

Step 4

Add oil, eggs, buttermilk, and vanilla extract. Stir lightly just to combine.

Step 5

Place a teaspoonful of the mixture in each muffin hole and make an indent in the center of each one.

Step 6

Fill each indent with 1/2 teaspoon of jam (or more if you want to).

Step 7

Cover the ham with the remaining muffin mixture. Bake for 12-15 minutes or until firm to touch and golden brown.

Step 8

Remove from oven and set aside to cool slightly for 5 minutes.

Step 9

Dust with icing sugar or cinnamon. Serve while still warm and enjoy!

Chef’s Tips

For a true donut feel, melt 50g butter. Dip each donut top in melted butter and then a little caster sugar.
