These delicious Minty Zucchini Fritters are great served as a side dish or for brekkie at the weekend.

Ingredients

  • 1kg (6) Zucchinis washed, trimmed and grated
  • 250g haloumi cheese coarsely chopped
  • 1 large egg, lightly beaten with a little salt and pepper
  • 50g baby spinach roughly chopped
  • 6 mint leaves finely chopped
  • 3 tsps Olive oil

Step 1

Preheat oven to 180°C.

Step 2

Place the grated zucchini in a clean tea towel and bring up the corners to form a sack.

Step 3

Twist the sack around until you have squeezed most of the liquid out.

Step 4

Place zucchini in a bowl with the cheese, egg, spinach and mint.

Step 5

Stir gently to combine.

Step 6

Heat the oil in the pan over medium heat for 2 minutes.

Step 7

Place 4 egg rings at a time in the pan and pour 1/2 cup of mixture into each ring.

Step 8

Pat down with the spatula to evenly spread the mixture.

Step 9

Cook for 3 minutes on one side. Remove the rings, flip the fritters over and continue to cook for a further 2 minutes.

Step 10

Keep warm on a baking tray lined with the Baking Sheet or BBQ Sheet while you cook the remaining mixture.

Step 11

Serve warm with the dressed salad leaves.

Chef’s Tips

Try serving with a dollop of Greek yoghurt flavoured with a teaspoon of lemon juice and 2 teaspoons of finely chopped mint.
