Square Roaster Brownie

Who doesn’t love the chocolate gooeyness of a brownie?

Brownies can be eaten warm, with ice cream, or by hand. They are often served with milk. The density of brownies can vary from cakey to fudgy.

Ingredients

  • 270g unsalted butter
  • 2 cups Caster sugar
  • 2 cups Self-raising Flour
  • 1 cup Cocoa
  • 2 tsp Vanilla essence
  • 4 large Eggs
  • 400g Milk chocolate bits
  • 1 and 1/2 cups walnuts (chopped)
  • 1.5 cups Frozen raspberries

Step 1

Preheat fan forced oven to 170C (350F).

Step 2

Melt butter over medium heat in a Square Roaster, once melted, turn off the heat and leave to rest for 2 minutes

Step 3

Combine all other ingredients in a Silicone mixing bowl.

Step 4

Pour all ingredients into the Square Roaster. Stir to combine well. Smooth surface.

Step 5

Bake for 25 minutes (no lid). Brownie will seem quite soft but will firm as it cools.

Step 6

Remove from oven and cool in Roaster for 10 minutes.

Step 7

Run a spatula around edge – use an egg flip to cut in the pan and dish directly out of the Roaster (or you could flip it onto the cooling rack)

Step 8

Serve warm with ice cream.

Chef’s Tips

You could melt some extra chocolate and drizzle it over the brownie. Allow to set for 5 mins It is deliciously rich so give small servings.
