The healthy Zucchini & Sweet Potato Fritters have a lot of flavor, and they are easy to prepare. These fritters are great as an appetizer, or with a side salad for a main dish.

Quick healthy lunch for the kids.

Ingredients

  • 400g Zucchini
  • 300g Sweet Potato
  • 1/2 Leek, Washed
  • 2tbs Fresh mint
  • Pinch ground nutmeg
  • Pinch salt and pepper to taste
  • 2 Eggs, lightly beaten
  • 2/3 cup Plain flour
  • 1/2 cup Parmesan cheese
  • 1/2 cup vegetable oil
  • 1 tzatziki dip

Step 1

Using the all-in-one salad maker, coarsely grate the zucchinis and sweet potato and spin until excess moisture is removed. Remove the lid and spin basket and put ingredients back into salad bowl. Place into a bowl with leek, mint and nutmeg. Season with salt and pepper. Add eggs, flour and parmesan and mix together well.

Step 2

Heat oil in a medium frying pan over medium high heat. Using a 1/4 cup measure, drop batter into oil and flatten slightly. Fry for about 2 mins each side until golden. Remove to a plate lined with paper towel and keep warm. Continue with remaining mixture. Serve fritters with tzatziki
