Salmon Cakes with Aoili

Quick, easy, tasty, high in Omega-3. You can probably even trick the kids by calling them hotcakes.

Ingredients

  • 500g Potatoes, scrubbed and diced
  • 1/2 cup Peas
  • 400g can Salmon, drained
  • 1 Tbsp Lemon zest
  • 1 Teasp Mustard
  • 50g Plain flour
  • 1 Egg
  • 1/2 cup Mayonaise
  • 1 clove Garlic, minced

Step 1

Add potatoes to salted boiling water. Simmer for 10 minutes (leave skin on for extra roughage). Add peas and bring back to boil for 2 minutes. Drain.

Step 2

Add salmon to a mixing bowl and break up with a fork.

Step 3

Add zest, flour, mustard and egg to the bowl and mix to combine.

Step 4

Roughly mash potatoes and peas. Stir thoroughly through the salmon mixture.

Step 5

Pour extra flour onto a plate. Divide the salmon mixture into 10 portions and form into patties approx 2cm thick. Turn on the floured plate to lightly dust each pattie.

Step 6

Bring frypan to medium heat, add olive oil. Lightly fry each pattie for 3-4 minutes each side.

Step 7

Create a “cheat’s” aoili. Stir minced garlic through mayonaise.

Step 8

Serve 2 patties with a dollop of aoili and green salad.

Chef’s Tips

Salmon can be replaced with tuna. Obviously they would no longer be salmon cakes lol
