Homemade Banana Pudding Pie
Instant banana puddings are not for me. This is the old-fashioned version!
Ingredients
- 2 cups vanilla wafer crumbs
- 3 bananas, sliced into 1/4 inch slices
- 1 1/2 cups white sugar
- 1/4 cup all-purpose flour
- 2 cups milk
- 3 egg yolks
- 2 teaspoons butter
- 2 teaspoons vanilla extract
- 3 egg whites
- 1/4 cup white sugar
Directions
- Pre-heat oven to 350 degrees F (175 degree C).
- Line the bottom and side of a pie plate measuring 9 inches with alternate layers of vanilla wafer crumbs, and banana slices.
- To make pudding, in a medium-sized saucepan, combine flour and 1 1/2 cups of sugar. Mix well and then add half of the milk. Whisk egg yolks into the sugar mixture. Add the remaining milk, butter or margarine.
- Stirring frequently, place mixture on low heat. Cook until thickened. Stir in vanilla extract and remove from heat. Pour half the pudding over vanilla wafers and banana layers while still hot.
- Pour the remaining pudding over the second wafer and banana layer. Pour the remaining pudding on top of second wafer layer and banana.
- Meringue is made by beating the egg whites in a large metal or glass bowl until they foam. Add 1/4 cup of sugar gradually, beating until stiff. Spread meringue in pie pan to cover the pudding layer.
- Bake for 15 minutes in a preheated oven, or until the meringue has browned. Chill before serving.
