Ingredients
- 4 lamb chops roughly diced (about 500gm lamb)
- 1 garlic clove, crushed
- 1 tbsp Olive oil
- 2 tsp Indian Biryani Meals Inspiration Spice Blend
- 2 1/2 cups vegetable stock
- 1 cup Basmati rice
Step 1
1. Heat oil in Pressure Cooker
Step 2
2. Add spice blend and garlic and saute until it forms a paste
Step 3
3. Add lamb and brown
Step 4
4. Add stock and bring to boil
Step 5
5. Add rice and on the boil, lock the pressure cooker
Step 6
6. Cook on high for 10 mins
Step 7
7. Release pressure – Add Beans and let sit for 5 minutes

RAITA 2 Lebanese cucumbers seeded and finely diced 1 cup Greek yogurt ½ dozen sprigs fresh mint 1 tsp ground cumin ½ tsp ground coriander
Method: Mix all ingredients
Chef’s Tips
Serve with fresh Roti or Naan bread and crisp whole green beans. Top biryani with coriander if desired.
