Maui Girl Mango Pie
This tropical pie is a dream come true for peach lovers. This pie has a more vibrant flavor and the beauty of the island fruit adds to its appeal. The recipe was born after I received a large bag full of mangoes from an anonymous Maui neighbour. I wanted to make sure I used every last one, so I adapted an apple pie recipe and came up with this tasty pie. The sweetness of the mangoes will reduce the need to add sugar.
Ingredients
- pastry recipe for a 9-inch double crust pie
- 4 cups peeled and sliced mango
- 1/2 cup white sugar
- 3 tablespoons cornstarch
- 2 teaspoons lemon juice
- 1 teaspoon ground cinnamon
- 1 tablespoon butter, cut into small chunks
Directions
- Pre-heat oven to 400 degrees F. (200 degrees Celsius). Half of the pie crust can be used to line a 9 inch pie pan. Set aside.
- In a large bowl, combine mango, sugar cornstarch lemon juice and cinnamon. Stir until sugar is dissolved. Pour the mango mixture in to the pie pan. Cover the mixture with top crust and dot with butter. Seal the edges by pinching the bottom and top crusts together. Make several vents in the top crust.
- Bake the pie in a preheated, hot oven for 45 minutes or until the crust turns golden and the juices bubble.
