Apple Custard Slice

Apple Custard Slices are a four-layer dessert that is easy to make. You can store the dessert for several days, or even freeze it for up to a month.

Ingredients
  

  • 1 cup Plain flour (sifted)-base
  • 1/2 cup brown sugar (base)
  • 1/2 cup desiccated coconut  (base)
  • 125 g Butter (melted - base)
  • icing sugar to dust
  • 800 g can pie apple (filling)
  • 3/4 cup thickened cream (filling)
  • 2 Eggs (filling)
  • 2 tbsp Caster sugar (filling)
  • 1/2 cup Plain flour (for topping)
  • 1/2 cup almond meal or almond slivered (for topping)
  • 1/3 cup Brown sugar (for topping)
  • 60 g Butter, melted (for topping)

Instructions
 

  • Preheat oven to moderate, 180c. Lightly grease and line an 18 x 28cm slice pan with baking paper.
  • BASE: In a bowl, combine flour, brown sugar and coconut. Blend in butter. Press mixture firmly into prepared pan. Bake for 15-20 minutes until lightly browned. Allow to cool.
  • FILLING: Spread apple over base. Whisk together cream, eggs and caster sugar. pour over apple. Bake for 20-25 minutes until firm.
  • TOPPING: In a bowl, combine all the ingredients. Sprinkle evenly over slice. Bake for 12-15 minutes until golden. Allow to cool in pan. Dust with icing sugar and cut into squares to serve.
