Pressure Cooker Fried Rice

This recipe is so quick and easy.

Ingredients
  

  • 2 cups Basmarti Rice
  • 2 cups Chicken or vegetable stock
  • 2 cloves Garlic (crushed)
  • 2 tbsp Soy sauce
  • 6 Slices Short Bacon (diced)
  • 1 Capsicum (any colour) (diced)
  • 1 cup Celery (diced)
  • 1 cup Corn Kernels
  • 1 cup Baby Peas
  • 4 Spring Onions (sliced)
  • 2 Eggs (optional)

Instructions
 

  • Mix all ingredients (except the Eggs) in the Pressure Cooker and bring to boil on high heat.
  • Using Setting 2, Lock on Lid and bring to pressure then turn heat to low and cook for 8 Minutes.
  • While the rice is cooking lightly whisk the Eggs and cook in Frypan, then chop.
  • Once rice is cooked Quick Release and stir in cooked Egg.
  • Season with Salt & Pepper and serve.

Notes

Individualise your Fried Rice by using your favourite Vegetables and Pork/Chicken.
