Uber-moist Banana Bread

This banana bread is so easy to throw together and incredibly moist. And with all that potassium it's got to be healthy - right?

Ingredients
  

  • 1 1/2 cups self-raising flour
  • 1/4 tspn bi-carb soda
  • 1 cup very ripe banana (about 3 bananas)
  • 1 1/2 Castor sugar
  • 2 large Eggs
  • 125 g Butter (soft, diced)
  • 100 ml Milk
  • 1 tspn Vanilla extract

Instructions
 

  • Heat oven to 175C
  • Mix together the flour and bicarb.
  • Puree banana in a food processor. Add the sugar and eggs and whiz together. Add the butter and whiz until creamy. Add milk and vanilla and whiz until combined.
  • Scrape out and fold gently through the flour mixture.
  • Pour the batter into a silicone loaf pan, or kugelhopf. Smooth out the top. Bake for 40 minutes.

Notes

If you'd like to ice cake, whiz together: 1 cup cream cheese, 100g butter, 400g icing sugar and 1 tspn vanilla. Smooth over the cake once it has cooled.
