Zucchini & Sweet Potato Fritters
The healthy Zucchini & Sweet Potato Fritters have a lot of flavour, and they are easy to prepare. These fritters are great as an appetizer, or with a side salad for a main dish.

- 400 g Zucchini
- 300 g Sweet Potato
- 1/2 Leek (Washed)
- 2 tbs Fresh mint
- Pinch ground nutmeg
- Pinch salt and pepper to taste
- 2 Eggs (lightly beaten)
- 2/3 cup Plain flour
- 1/2 cup Parmesan cheese
- 1/2 cup vegetable oil
- 1 tzatziki dip
Using the all-in-one salad maker, coarsely grate the zucchini and sweet potato and spin until excess moisture is removed. Remove the lid spin the basket and put the ingredients back into a salad bowl. Place into a bowl with leek, mint, and nutmeg. Season with salt and pepper. Add eggs, flour, and parmesan and mix together well.
Heat oil in a medium frying pan over medium high heat. Using a 1/4 cup measure, drop batter into oil and flatten slightly. Fry for about 2 mins each side until golden. Remove to a plate lined with paper towel and keep warm. Continue with remaining mixture. Serve fritters with tzatziki
