Ingredients

Chorizo
(diced)
1
Red capsicum
(diced)
1
Onion
(diced)

Kipfler potatoes
(cooked until tender)
60ml
Buttermilk

eggs

Parmesan
(grated)
Instructions
Fry the chorizo in a small pan until browned. Drain.
Saute capsicum and onion in olive oil, for 2-3 minutes.
Slice potatoes. Add potatoes and chorizo to the pan
Whisk buttermilk and eggs together. Pour evenly over the sauted ingredients.
Cook over a low heat until almost cooked through.
Sprinkle parmesan. Place pan under hot grill for 2 minutes or until golden brown and slightly puffed.
Slide from pan. Slice into wedges. Serve hot or cold.
Notes
Diced chicken can also be added in Step 2. If you do, probably also add 4 eggs to keep the proportions correct.
