Chorizo Frittata

Ingredients
  

  • 1 Chorizo (diced)
  • 1 Red capsicum (diced)
  • 1 Onion (diced)
  • 6 Kipfler potatoes (cooked until tender)
  • 60ml Buttermilk
  • 6 Large eggs
  • 1/2 cup Parmesan (grated)

Instructions
 

  • Fry the chorizo in a small pan until browned. Drain.
  • Saute capsicum and onion in olive oil, for 2-3 minutes.
  • Slice potatoes. Add potatoes and chorizo to the pan
  • Whisk buttermilk and eggs together. Pour evenly over the sauted ingredients. Cook over a low heat until almost cooked through.
  • Sprinkle parmesan. Place pan under hot grill for 2 minutes or until golden brown and slightly puffed.
  • Slide from pan. Slice into wedges. Serve hot or cold.

Notes

Diced chicken can also be added in Step 2. If you do, probably also add 4 eggs to keep the proportions correct.
