Method
- Fry the chorizo in a small pan until browned. Drain.
- Saute capsicum and onion in olive oil, for 2-3 minutes.
- Slice potatoes. Add potatoes and chorizo to the pan
- Sprinkle parmesan. Place pan under hot grill for 2 minutes or until golden brown and slightly puffed.
- Slide from pan. Slice into wedges. Serve hot or cold.
Notes
Diced chicken can also be added in Step 2. If you do, probably also add 4 eggs to keep the proportions correct.
