I like to keep lemon curd in my fridge. It's been a lifesaver when I have had to make impromptu desserts or an unexpected visitor stop by for tea.

Ingredients
  

  • 125 g Fresh lemon juice
  • 3 Eggs
  • 4 egg yolks
  • 150 g Caster sugar
  • 200 g butter ( diced)
  • 1 tspn lemon zest (grated finely)

Instructions
 

  • Insert StirAssist. Add all ingredients. Temp 85C, Time 6 min, Speed 1. Start.
  • Pour into sterilised jars to cool.
