Cauliflower Patties

So easy great to freeze can be made gluten free

Ingredients
  

  • 600g Cauliflower
  • 1 Onion (finely diced)
  • 1 clove Fresh garlic (crushed)
  • 8 short Bacon (diced)
  • 2 Zucchini (grated)
  • 2 Carrot (grated)
  • 3 Egg lightly beaten3
  • 1-1 1/2  cups Wholemeal flour
  • Salt and pepper
  • 1 cup Parmesan cheese (grated)
  • 3/4 cup Tasty cheese (grated)

Instructions
 

  • Place cauliflower into food processor and blitz untill it resembles fine bread crumbs place in bowl.
  • Grate zucchini and carrots and squeeze out excess water place in bowl with cauliflower
  • Place cheese's salt and pepper and flour in bowl
  • Add the lightly beaten egg and stir well
  • Heat sauté pan up add a little rice bran oil then scoop out mixture to as big or little as you like cooking each side for 2-3 mins

Notes

Great frozen. If the mixture isn't wet enough add 1/4 cup of water.
