Ingredients
Method
- Soak noodles in warm water until soft.
- Heat 20mls oil in wok, fry eggs then take them out.
- Add oil in wok, fry garlic until golden brown.
- Add fresh chilli, chilli powder and spring onions, stir for 2 mins.
- Add minced chicken and stir until well browned.
- Add 1/2 quantities of fish sauce ABC sauce and lime leaves, stir quickly.
- Add chopped tomatoes and noodles. Stir until cooked. Add the rest of sauces, basil and coriander leaves.
- Serve and garnish with extra basil coriander leaves and chopped peanuts.

I feed a family of 4 so I trippled the recipe.
