- Preheat oven to 180°C
- Spray the Muffin Tray with cooking oil.
- Place flour, baking powder and caster sugar in a bowl and mix well.
- Add oil, eggs, buttermilk and vanilla extract. Stir lightly just to combine.
- Place a teaspoonful of the mixture in each muffin hole and make an indent in the centre of each one.
- Fill each indent with 1/2 teaspoon of jam (or more if you really want to).
- Cover the ham with the remaining muffin mixture. Bake for 12-15 minutes or until firm to touch and golden brown.
- Remove from oven and set aside to cool slightly for 5 minutes.
- Dust with icing sugar or cinnamon. Serve while still warm and enjoy!
Notes
For a true donut feel, melt 50g butter. Dip each donut top in melted butter and then a little caster sugar.
