Preheat the oven to 200°C.
Zest the orange on a fine grater.
Remove the skin and pith from the orange with the paring knife.
Cut between each membrane to release the segment and set aside.
Combine all ingredients except icing sugar in the bowl of a food processor and whiz until combined.
Cut each orange segment into 3 small pieces, set aside.
Place a rounded dessertspoon of the cake mix in each muffin hole and top with a small piece of orange.
Place muffin pan onto a cooling rack on shelf of the oven and bake for 20 minutes or until cakes are cooked.
Cool and dust with icing sugar to serve.
