- Preheat the oven to 200°C. 
- Zest the orange on a fine grater. 
- Remove the skin and pith from the orange with the paring knife. 
- Cut between each membrane to release the segment and set aside. 
- Combine all ingredients except icing sugar in the bowl of a food processor and whiz until combined. 
- Cut each orange segment into 3 small pieces, set aside. 
- Place a rounded dessertspoon of the cake mix in each muffin hole and top with a small piece of orange. 
- Place muffin pan onto a cooling rack on shelf of the oven and bake for 20 minutes or until cakes are cooked. 
- Cool and dust with icing sugar to serve.
