Quick Hummus Dip

So quick and easy to whip up. The perfect dip for entertaining or a night in!

Ingredients
  

  • 400 g canned chickpeas
  • 2 Tbs lemon juice
  • 1 clove garlic (crushed)
  • 1 tsp ground cumin
  • 2 Tbs Tahini or sesame paste (optional)
  • 4 Tbs Water
  • 2 tsp extra virgin olive oil
  • 1/2 tsp paprika
  • 4 round pita breads

Method
 

  1. Drain the chickpeas and rinse under cold running water: Reserve a handful for garnishing.
  2. In a food processor, combine the chickpeas, lemon juice, garlic, cumin, salt, water and tahini, whiz to a creamy puree, adding more water if needed.
  3. Taste for lemon juice and salt, adjust to taste accordingly.
  4. Place in a serving bowl and drizzle with extra virgin olive oil and scatter with the reserved chickpeas.
  5. Sprinkle with paprika and serve with pita bread, warmed in a moderate oven or under a grill for a minute or two, cut in quarters.
