Method
- Place the chicken pieces in a dish and cover with buttermilk. Leave to stand overnight.
- Sieve the flour and stir in the spices.
- Beat the egg in a shallow dish.
- Remove the chicken from the buttermilk and drain, dip into the beaten egg then roll in the seasoned flour.
- Allow to stand for 15 minutes.
- Heat oil in a large frypan until very hot.
- Place the chicken skin side down and cook for 10 minutes before turning over and cook for a further 10 minutes.
- Drain on kitchen paper and serve.
