White Chocolate & Coconut Muffins

The smell of freshly baked coconut and chocolate muffins is what the family will crave!

Ingredients
  

  • 150 g Butter (softened)
  • 150 g Castor sugar
  • 2 Eggs
  • 250 g self-raising flour
  • 150 g white chocolate (finely chopped)
  • 60 g Shredded coconut
  • 125 ml coconut milk

Method
 

  1. Preheat the oven to 180Âșc.
  2. Beat the sugar and butter until light and creamy.
  3. Beat the sugar and butter until light and creamy.
  4. Mix in the flour, coconut milk, chocolate and shredded coconut.
  5. If desired, line the Silicone Muffin Tray with muffin cases.
  6. Spoon the muffin mixture into the Silicone 12 cup Muffin Tray to divide evenly among the 12 cups.
  7. Bake for 15-20 minutes or until cooked.
  8. Remove from oven and remove from Silicone Muffin Tray immediately. Allow to cool on wire rack.
  9. Dust with icing sugar before serving.
