1-Cup Christmas Puddings
1-Cup Christmas Puddings
These 1-Cup Christmas Puddings are so quick and easy and can be served up individually

Ingredients
- 510g fresh white breadcrumbs (not dried)
- 1 tsp ground ginger
- 1 tsp mixed spice
- 250g Butter, melted
- 450g mixed dried fruit
- 150g dates, chopped
- 150g pitted prunes
- 1 tsp Salt
- 250g Brown sugar
- 75g grated carrot
- 2 Eggs, lightly beaten
- 4 Tbs Brandy
- 2 Tbs Golden syrup
- 2 Tbs Parisian essence or treacle
- 2/3 cup self-raising flour (gluten-free flour optional)

Step 1
Place all ingredients in a bowl and mix well to combine.
Step 2
Divide mixture evenly between muffin moulds.
Step 3
Place puddings in Steamer of Wok over boiling water, cover with lid and steam for 20 minutes.
Step 4
Top up water in wok and continue to steam for a further 40 minutes.
