Celebration Chocolate Puddings

The pudding‘s creamy texture is one of its most impressive features, but it has a secret that not everyone knows.

Ingredients

  • 225g Butter, softened
  • 225g Brown sugar
  • 3 Eggs
  • 1 tsp Vanilla essence
  • 1 1/2 cup self-raising flour
  • 1 tsp baking powder
  • 1 cup almond meal
  • 3 Tbs cocoa powder

Step 1

Fill Wok with hot water up to the rivets. Cover, bring water to the boil.

Step 2

Whisk butter and sugar together until creamy.

Step 3

Add eggs one at a time, whisking continuously (to prevent curdling the mixture), add vanilla.

Step 4

Add remaining ingredients and fold through.

Step 5

Spoon mixture evenly into 6 1-cup muffins, place in steamer, cover, steam for 25 minutes.

Step 6

Serve dusted with icing sugar, cream or ice cream

Chef’s Tips

If mixture curdles during the egg addition add a small amount of flour to the mixture, continue to beat. For a more decadent pudding, add a soft chocolate ball, such as a Nestlé Rolo chocolate & caramel bites (from the confectionary aisle) into the centre to create a delicious fondant.
