Uber-moist Banana Bread

This Uber-moist Banana Bread is so easy to throw together and incredibly moist. And with all that potassium it’s got to be healthy – right?

Ingredients

  • 1 1/2 cups self-raising flour
  • 1/4 tspn bi-carb soda
  • 1 cup very ripe banana (about 3 bananas)
  • 1 1/2 cups Castor sugar
  • 2 Eggs, large
  • 125g Butter, soft, diced
  • 100ml Milk
  • 1 tspn Vanilla extract

Step 1

Heat oven to 175C

Step 2

Mix together the flour and bicarb.

Step 3

Puree banana in a food processor. Add the sugar and eggs and whiz together. Add the butter and whiz until creamy. Add milk and vanilla and whiz until combined.

Step 4

Scrape out and fold gently through the flour mixture.

Step 5

Pour the batter into a silicone loaf pan, or kugelhopf. Smooth out the top. Bake for 40 minutes.

Chef’s Tips

If you’d like to ice cake, whiz together: 1 cup cream cheese, 100g butter, 400g icing sugar and 1 tspn vanilla. Smooth over the cake once it has cooled.
