Zucchini Slice with a Twist
Super quick and easy and packed full of flavors!
Ingredients
- 1 punnet sliced mushrooms
- 200g rindless bacon, chopped
- 2 Zucchinis grated
- 1/2 Sweet Potato Grated
- 2 Carrots grated
- 1 onion diced
- 12 Eggs
- 300ml cream
- 1 green or red capsicum
- 1 cup frozen peas & corn
- 2 handfuls spinach
- 1/4 cup Plain flour
- 1 packet of French onion soup mix
- 1 cup Mozzarella cheese
Step 1
Preheat oven to 180°C.
Step 2
Mix well all the ingredients (except eggs, cream & French onion mix) in the Square Roaster or in a Bowl.
Step 3
Whisk eggs, cream, and French Onion in a bowl together and pour over vegetables. Mix through.
Step 4
Cook in the oven with Lid on for 15mins, then take lid off and cook for a further 15min.

- 2 Handfuls spinach
- 1/4 cup Plain flour
- 1 Packet of French onion soup mix

Instructions
