Lemon Delicious Puddings

Ingredients
- 200g Caster sugar
- 300g self-raising flour
- 200g Butter, melted
- 4 Eggs, lightly beaten
- 2 tsp Vanilla essence
- 1 Tbs Lemon zest
- 1/3 cup lemon juice
Step 1
Half-fill the Wok with warm water, and bring it to a rapid boil.
Step 2
Combine all ingredients in a Silicone Bowl, and stir well.
Step 3
Divide the mixture evenly between Muffin Cups.
Step 4
Place onto Steamer, cover, and simmer on high for 25 minutes or until a skewer inserted into the middle of the pudding comes out clean.
Step 5
Turn upright and invert onto the Cooling Rack.
Step 6
Serve with lemon curd or lemon custard
Chef’s Tips
Use Silicone Egg Poachers or Tartlets as a substitute for 1-cup Muffin Cups to make 12 smaller puddings.
