Choc Chip Eggless Muffins Recipe

This great, easy recipe can be changed to use dairy-free chocolate, and GF flour if needed..

Ingredients

  • 1 1/2 cups Plain flour
  • 1 cup Castor sugar
  • 1/3 cup Cocoa
  • 1 teaspoon bi-carb soda
  • 1/2 teaspoon Salt
  • 1/2 cup Choc Chips
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Vinegar
  • 1/2 cup oil
  • 1 cup Water

Step 1

In a large bowl, put all the dry ingredients into the bowl and stir to coat the chocolate chips. Then in a small bowl, put all the wet ingredients and stir. Then add the wet ingredients to the dry, and don’t over-mix. They will turn out better if just mixed to combine. Then pour into our 12-cup silicone muffin tray and bake at 150c for 20 mins, or until cooked.

Chef’s Tips

So the choc chips could be dairy-free/sugar-free if you choose. I find that the Black and Gold brand hold their shape really well, and are cheap. The flour could be substituted for GF, but you must add an extra 1/3 cup.
