Chorizo Frittata

Ingredients
- 1 Chorizo, diced
- 1 Red capsicum, diced
- 1 Onion, diced
- 6 Kipfler potatoes, cooked until tender
- 60ml Buttermilk
- 6 Eggs, large
- 1/2 cup Parmesan, grated
Step 1
Fry the chorizo in a small pan until browned. Drain.
Step 2
Saute capsicum and onion in olive oil, for 2-3 minutes.
Step 3
Slice potatoes. Add potatoes and chorizo to the pan.
Step 4
Whisk buttermilk and eggs together. Pour evenly over the sauted ingredients. Cook over a low heat until almost cooked through.

Step 5
Sprinkle parmesan. Place pan under hot grill for 2 minutes or until golden brown and slightly puffed.
Step 6
Slide from pan. Slice into wedges. Serve hot or cold.
Chef’s Tips
Diced chicken can also be added in Step 2. If you do, probably also add 4 eggs to keep the proportions correct.
