I like to keep lemon curd in my fridge. It’s been a lifesaver when I have had to make impromptu desserts or an unexpected visitor stop by for tea.
Ingredients
- 125g Fresh lemon juice
- 3 Eggs
- 4 egg yolks
- 150g Caster sugar
- 200g butter, diced
- 1 tspn lemon zest, grated finely
Step 1
Insert StirAssist. Add all ingredients. Temp 85C, Time 6 min, Speed 1. Start.
Step 2
Pour into sterilised jars to cool.
