Mexican Chicken Stack
Quick, easy, kids could make it for you! Sooo delicious! This delicious Mexican stack is a great way to spice up your family’s usual weeknight meal. It’s made by layering tortillas, melted cheese, and a chicken filling with tender spices.
Ingredients
- 1 Sour cream
- 1 grated cheddar cheese
- 1 Pack of jumbo tortillas
- 1 tsp Mexican spice blend
- 1 jar Mexican sauce
- 1 whole BBQ chook shredded
Step 1
Preheat oven to 180 degrees. 1st tortilla on the base of the pan, spread Mexican sauce, spread BBQ chicken over sauce, sprinkle spice and cheese.
Step 2
Spread sour cream over 2nd tortilla and place down on the first layer. Repeat steps for 3 layers of the same.
Step 3
Finish with final tortilla on top, sprinkle with cheese, and place in preheated oven (without lid) for 15 minutes or until cheese on top is browned
Step 4
When ready put on the stovetop, place a large chopping board over top hold the handles with the board and flip out. Cut into quarters and serve immediately.
