Cauliflower Patties
Cauliflower Patties
So easy and great to freeze and can be made gluten-free
Ingredients
- 600g Cauliflower
- 1 Onion, finely diced
- 1 clove fresh garlic, crushed
- 8 Short Bacon, diced
- 2 Zucchini, grated
- 2 Carrot, grated
- 3 Egg, lightly beaten
- 1-1 1/2 cups Wholemeal flour
- salt and pepper
- 1 cup grated parmesan cheese
- 3/4 cup Tasty cheese, grated
Vegetable Patties
Step 1
Place cauliflower into a food processor and blitz until it resembles fine bread crumbs place in bowl.
Step 2
Grate zucchini and carrots and squeeze out excess water place in bowl with cauliflower
Step 3
Place cheese salt pepper and flour in a bowl
Step 4
Add the lightly beaten egg and stir well
Step 5
Heat sauté pan up add a little rice bran oil then scoop out the mixture to as big or as little as you like cooking each side for 2-3 mins
Chef’s Tips
Great frozen. If the mixture isn’t wet enough add 1/4 cup of water.
