Huey Teow Pad Ki Mow ( Drunken Noodles )
This is one of those recipes you can make when there is no time, it’s so full of flavour. Huey Teow Pad Ki Mow ( Drunken Noodles )
Ingredients
- 100g chicken mince
- 100g Rice stick noodles packet
- 40ml Peanut oil
- 2 cloves Cloves garlic, diced
- 2 small Small red chillis, , finely chopped
- 1 1/2 tsp Chilli powder
- 20ml Fish sauce
- 20ml Sweet soy (ABC sauce)
- 10ml Seasoning soy sauce
- 1 med diced tomato
- 2 kaffir lime leaves – finely shredded
- Hand full Roasted peanuts
- 2 Eggs fried
- 1/4 cup Basil leaves, torn
- 1/4 cup chopped fresh coriander
- 4 Spring onions chopped
Step 1
Soak noodles in warm water until soft.
Step 2
Heat 20mls oil in wok, fry eggs then take them out.
Step 3
Add oil in wok, fry garlic until golden brown.
Step 4
Add fresh chilli, chilli powder and spring onions, stir for 2 mins.
Step 5
Add minced chicken and stir until well browned.
Step 6
Add 1/2 quantities of fish sauce ABC sauce and lime leaves, stir quickly.
Step 7
Add chopped tomatoes and noodles. Stir until cooked. Add the rest of sauces, basil and coriander leaves.
Step 8
Serve and garnish with extra basil coriander leaves and chopped peanuts.

I feed a family of 4 so I trippled the recipe.
