Pressure Cooker Fried Rice

This recipe is so quick and easy.

Fried rice is a dish made of rice that is stir-fried with vegetables, meat, eggs or seafood.

Ingredients

  • 2 Cups Basmarti Rice
  • 2 Cups chicken or vegetable stock
  • 2 Cloves garlic, crushed
  • 2 Tablespoons soy sauce
  • 6 Slices Short Bacon, diced
  • 1 Capsicum (any colour), diced
  • 1 Cup Celery, diced
  • 1 Cup Corn Kernels
  • 1 Cup Baby Peas
  • 4 Spring Onions, sliced
  • 2 Eggs (optional)

Step 1

Mix all ingredients (except the Eggs) in the Pressure Cooker and bring to boil on high heat.

Step 2

Using Setting 2, Lock on Lid and bring to pressure then turn heat to low and cook for 8 Minutes.

Step 3

While the rice is cooking lightly whisk the Eggs and cook in Frypan, then chop.

Step 4

Once rice is cooked Quick Release and stir in cooked Egg.

Step 5

Season with Salt & Pepper and serve.

Chef’s Tips

Individualise your Fried Rice by using your favourite Vegetables and Pork/Chicken.
